Merry Christmas!  

My gift to you is a bonus post and a recipe, all wrapped up in one.   For metric conversion, you can go here.

5 bananas, over ripe--peeled and mushed

2 cups flour

1 cup brown sugar

3/4 cup butter  (1 1/2 sticks)  room temp

2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

3/4 cup lightly toasted walnuts 

2 egg yolks + 1 egg (You could probably just use two eggs)


Cream butter, sugar and vanilla.  Add egg and mix well.  Add dry ingredients and mix until just combined--be careful not to over mix!  Stir in banana and walnuts--again, be careful not to over mix.  Sprinkle top with cinnamon/sugar mixture if you want (we always have a mixture made at our place. If you don't, just combine equal parts sugar and cinnamon.  You won't need much for sprinkling).

 350 for an hour or so.  Will make 5 mini loaves and those take about 35 to 40 minutes.
